Ingredients

For the buns:

  • 4 cups all-purpose flour
  • ½ cup granulated sugar
  • ½ teaspoon salt
  • 1 tablespoon active dry yeast
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground allspice
  • ¼ teaspoon ground cloves
  • 1 cup warm milk
  • ¼ cup unsalted butter, melted
  • 2 large eggs
  • 1 cup raisins
  • ¼ cup mixed peel (optional)

For the cross:

  • ½ cup all-purpose flour
  • ¼ cup water

For the glaze:

  • ¼ cup granulated sugar
  • ¼ cup water

Instructions

  1. In a large bowl, combine the flour, sugar, salt, yeast, and spices.
  2. In another bowl, whisk together the warm milk, melted butter, and eggs. Gradually add the wet mixture to the dry ingredients until a soft dough forms.
  3. Knead the dough on a lightly floured surface for about 10 minutes, until smooth and elastic. Fold in the raisins and mixed peel.
  4. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1–2 hours, or until doubled in size.
  5. Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper.
  6. Punch down the dough and divide it into 12 equal pieces. Shape into smooth buns and place them on the tray, leaving space between each.
  7. Mix flour and water to form a thick paste, then pipe a cross over each bun.
  8. Bake for 20–25 minutes, until golden brown and fragrant.
  9. While baking, simmer sugar and water to create a light glaze. Brush over the buns as soon as they come out of the oven for a beautiful shine.
